I am all about making too much food on Thanksgiving. We only have our little family of four, since my family lives far away and Casey celebrates with her husbands family.
I love making about 6lbs of potatoes, a 20lb turkey and at least 8lbs of sweet potatoes. Though my biggest leftover item, is ALWAYS pumpkin. I always end up buying too many cans, so with the help of Good Cook, I decided to make a recipe showing you how to use your leftover pumpkin.
This year, Good Cook challenged me and a whole bunch of other bloggers to create an original recipe using leftovers. I am #9!
I made mine with the help of a couple of great Good Cook products. First was the 3 Pack Whisk Set.

Vanilla Bean Pumpkin Shortcake
Ingredients:
1/2 can of pumpkin
1 vanilla bean
4 tablespoons softened cream cheese
2 tbsp powdered sugar
8 shortcakes
whipped cream and cinnamon for topping
Directions:
In a large bowl, combine the pumpkin, vanilla bean, cream cheese and powdered sugar, until no longer lumpy. Scoop into a premade shortcake shell, and top with whipped cream and cinnamon.
