In my family, like many others, I am always trying to get 15 things done at a time during the holidays. Whether it's baking, school work, gift wrapping, shopping or cooking..we are always doing at least 2 things at once!
This year, I had the help of a Kenmore Elite Stand Mixer.
First off, my absolute FAVORITE feature, is the light in the bowl. Hands down. Want to know why? It seems simple, right? a light in the bowl? Well, when you are doing 3 things at once like frosting a cake, and stirring gravy..it helps to look across the counter and be able to SEE into the mixer without having to walk over to it.
Really. I could see what was inside the bowl mixing from my sink!
The second feature I love is the timer. Right on the side, when you start mixing, you can hit start and it will tell you how long you have been mixing for! You can also set the timer to mix for a specific amount of time and it will shut off automatically.

Last year, on Christmas Eve, I was trying to make our traditional peanut butter brownies for dessert, and realized I had NO eggs. Well, it was Christmas Eve, so my choices were limited. I decided to use mayonaise in place of the eggs and oil and crated this.

cup All-Purpose Flour

tsp Baking Powder
1/2

salt

cup Sugar
1/2
cup Mayonnaise
1
tsp Vanilla Extract
1
cup Semi-Sweet Chocolate Chips, melted
1 cup peanut butter chips
1/2
cup
chopped walnuts, optional
Instructions

Heat oven to 350°F. Spray an 8-inch square baking pan with non-stick cooking spray or line with aluminum foil; set aside.

Combine the flour, baking powder and salt in a small bowl; set aside.

In a large bowl, combine the sugar, Hellmann's Real Mayonnaise, eggs and vanilla; stir until smooth and set aside.

Place
the chocolate chips in a saucepan over another pan with water (double
boiler) heated over medium heat for 3 minutes or until chocolate is
melted, stirring often.

Stir
the egg mixture into the melted chocolate until smooth. Stir the flour
mixture and walnuts into the chocolate batter until blended. Spread
batter into the prepared baking pan.

From holiday cooking disasters to proper party etiquette, holiday events often prove to be a point of stress during what should be the happiest time of the year.
