Hungry Girl’s Sweet Summer Albacore Salad Recipe

As summer comes to an end, I wanted to share one of my favorite recipes with you. It's not one that can only be made in the summer, if you can't find watermelon in the fall/winter, you can simply leave it out, or substitute it with some sliced grapes. 


First get all your ingredients ready. 


Then slice the tomatoes, and the watermelon and add to the tuna and arugla. 

Top with the squeezed lemon, feta, salt and pepper and combine. 



Hungry Girl’s Sweet Summer Albacore Salad

Entire recipe: 170 calories, 5g fat, 493mg sodium, 11g carbs, 2.5g fiber, 7g sugars, 22.5g protein

One 2.6-oz. pouch StarKist® Albacore White Tuna in Water
1 cup baby arugula
1/2 cup halved cherry tomatoes
1/2 cup diced seedless (or seeded) watermelon
2 tbsp. crumbled reduced-fat feta cheese
1 tsp. lemon juice
Optional seasonings: salt and black pepper 


In a medium bowl, combine all ingredients and toss to coat. Enjoy!
